A hearty family bake.
Ingredients
- 2 cups cooked pasta (penne, macaroni etc)
- 1 cup canned brown lentils
- 1 onion, diced
- 3 eggs
- 6 tablespoons sour cream
- 1 tomato, diced
- 1 custard apple
- 1 teaspoon salt & pepper
- 2 teaspoons nutmeg
- 2 teaspoons butter
Method
- Fry onion until soft.
- Beat egg, sour cream, salt, pepper and nutmeg together.
- Mix custard apple pulp, cooked pasta, onion, lentils, tomato and butter together in a 3 pint ovenproof dish.
- Pour the egg mixture into the dish and bake at 220C for 30 minutes.
- Serve with a fresh herb and vegetable salad.
