Lentil and Custard Apple Pasta Bake

Ingredients

  • 2 cups cooked pasta (penne, macaroni etc)
  • 1 cup canned brown lentils
  • 1 onion, diced
  • 3 eggs
  • 6 tablespoons sour cream
  • 1 tomato, diced
  • 1 custard apple
  • 1 teaspoon salt & pepper
  • 2 teaspoons nutmeg
  • 2 teaspoons butter

Method

  • Fry onion until soft.
  • Beat egg, sour cream, salt, pepper and nutmeg together.
  • Mix custard apple pulp, cooked pasta, onion, lentils, tomato and butter together in a 3 pint ovenproof dish.
  • Pour the egg mixture into the dish and bake at 220C for 30 minutes.
  • Serve with a fresh herb and vegetable salad.
