No Bake Custard Apple Dessert

  • 500g custard apple pulp
  • 2 eggs, separated
  • 1 tablespoon gelatine
  • 250ml milk
  • 6 teaspoons sugar
  • 250ml whipping cream
  • pinch salt
  • 4 teaspoons semi-sweet biscuit crumbs

Method

  • Cut the custard apple, remove seeds, blend.
  • Mix gelatine, sugar and salt. Beat egg yolks with the milk and add the custard apple pulp. Put in a double boiler or saucepan, mix in gelatine and heat over boiling water stirring until gelatine is dissolved.
  • Remove from heat and cool.
  • Beat the egg whites until stiff and fold them into the gelatine mixture. Then fold in the whipped cream. Pour into a baking paper lined loaf tin and sprinkle half the biscuit crumbs on top.
  • Chill until firm (a few hours) unmould onto serving dish and sprinkle remaining crumbs over.
  • Add fresh berries or dried fruit slice as an optional garnish
