This is so worth the creation time! This dessert has a wow factor, beautiful to present at any dinner gathering. Use Creme de Menthe, or any liqueur that pairs well with sweet ice cream - such as Cointreau, Baileys.
Ingredients
- 1 medium custard apple
- 1 teaspoon lemon juice
- 500ml whipping cream
- creme de menthe liqueur to your taste
- mint to garnish
- 6 meringue nests, ready-made or home-made
Method
- Remove seeds and blend the custard apple flesh with lemon juice.
- Place in freezer until mixture begins to set.
- Whip cream and fold lightly into semi-frozen custard apple.
- Re-freeze. Transfer to fridge 30 minutes before serving to soften a little.
- Scoop mixture into balls and place in meringue nests. Pour liqueur over and serve.
